Poderi Cellario’s "Il Vino Che Non C’è," which translates to "The Wine That Doesn't Exist," is a playful nod to the winery’s experimental spirit and dedication to natural winemaking. The Cellario family, known for their hands-off approach and focus on traditional methods, crafts wines that are unfiltered, unfined, and made with minimal intervention. This unique wine blends local Piedmontese varietals—Nascetta, Malvasia, and Moscato. After macerating for a couple of months in clay amphoras, it developed exotic flavors like pineapple, honey, green mango, and lime.
