The Nittnaus vineyards are handled according to biodynamic methods; harvest by hand, spontaneous fermentation, and a low-intervention approach to winemaking. John, the winemaker, was the first to recognize the potential lying dormant in the native Austrian grape varieties, and on the western shore of Lake Neusiedl in the Leitha mountains.
