Upon learning about this, Christoph Hoch wanted to try making a pet nat. In an effort to learn about sparkling wine, he spent time in Champagne with DeSousa, Laherte, and Tarlant. Blending Grüner Veltliner and Zweigelt from vineyards where chalky soil, much like what is found in the Cote des Blancs in Champagne. Mint, lime, and minerality continue with marked crisp acidity that adds vibrancy, while the wine's mineral backbone gives it depth and complexity.
