The Cellario family takes joy in their native surroundings in the hills around Carrù in Piemonte, channeling the environment into their wines. Il Baffone which translates to "the mustache guy" in Italian, is a tribute to Tonio, Cinzia Cellario’s father, who imparted the art of making pét-nat to his children. This sparkling wine is zesty and fun, offering vibrant notes of pineapple on the nose and flavors of lime, lemon zest and mint on the palate, perfect for refreshment! Crafted with certified organic farming, the grapes are grown in marl and tuff soil at 350 meters altitude. After 5 days in stainless steel, the wine is bottled with conserved passito (late harvest) must to induce secondary fermentation, with no added sulfur and no disgorgement.
